Chickpea flour consists of dried and finely ground chickpeas. It is used in both baking and cooking and acts as a binder instead of eggs in vegan vegetable and bean patties, pancakes and omelettes. The flour can also be used to make falafel. In France it is used for socca – Provençal chickpea pancakes. In India, the flour is popular and is used in the dish pakoras – deep-fried vegetables. The flour must be cooked (heated) before consumption.
