Bulgur plays a central role in Middle Eastern cooking and comes in different varieties: fine, medium and coarse. Bulgur Fin is a bulgur where the wheat grains have been crushed very finely. This type of bulgur doesn’t need to be cooked, only soaked, and is therefore ideal for tabbouleh (salad) and kibbeh (a mixture of bulgur, meat and spices). It’s best cooked in lemon juice for extra flavor.
